I had always wanted to try making these with sweet potato gnocchi instead of regular potatoes.

make the gnocchi. That was the fun part, making great memories together. Our newest and latest chef in the family Antonio! He had so much fun cooking with grandma. Memories to last a lifetime. I love how these moments are captured for the future forever. His sister a down below is Talia she is 18 months. I can't wait until she is old enough to teach and start learning how to cook. It's been awesome having the whole family learn how to cook and enjoy traditions together for all the holiday preparations.

Sweet Potato Gnocchi
ingredients:
- 2 large sweet potatoes cooked (I microwaved them, peeled and whipped them till smooth with an electric beater)2 teaspoons salt2 tablespoon butter2 1/2 cups regular all purpose flour1 egg
instructions:
- I placed all ingredients in a large bowl using an industrial mixer until the soft dough formed around 40 secondsRoll into ropes, cut 1 inch pieces using a floured board. Using two fingers, press into the cut gnocchi and roll towards you. Place on a large cookie sheet. When all the gnocchi are cut and rolled, place the whole tray in the freezer. Once they are frozen, you can cook them in salted boiling water or place in a freezer bag until ready to cook.The sauce I prefer to make is simply an herb butter. There are several online with cream, sage, rosemary and nutmeg. I used melted butter with basil, oregano, pinch of rosemary, salt, pepper to taste and a pinch of cinnamon. Toss the boiled pasta into this mixture.Note: You can double this recipe for larger family gatherings
