A Special Occasion Cookie Mom Made I Secretly Loved



I can still remember my mom making these cookies when I was a child and the taste is etched in my mind.


I loved how she threw everything in a bowl and it was always the perfect recipe.



I just wished they weren't just for special occassions.



I always had to wait for mom to make these for just wedding trays.



I knew there was always those special cookies our Italian family made just for those times.



Secretly they were my all time kegemarane cookie. I just never told her.




It was easier to sneak those cookies after the cooled and eat them. What delicious memories!



Weddings, Communions, Baptisms and Confirmations were the big cookies making times, and of course Christmas.

Jam Filled Bow Tie Cookies

prep time: 15 minscook time: 25 minstotal time: 40 mins

ingredients:

1 cup butter 
2 1/2 cups flour
1 egg
Note: If you love the traditional style dough, omit the egg above and add  one 8 ounce package of cream cheese to this recipe that is the biggest difference. 
Assorted jams and fillings, pineapple, raspberry, apricot, blueberry, nutella,  almond paste ( whatever you like)

Garnish: powdered sugar

instructions:

Mix butter, flour and egg to form soft dough in a heavy mixer. This is easier to use if you refrigerate it for 20 minutes.

Flour a board. Roll dough out. Cut with fluted edge circle cookie cutter. Fill with a little bit of the jam. Fold circle toward the center and pinch to form bows.

Bake at 400 hot preheated panggangan until set. Around 10 to 15 minutes until slightly golden brown. 

Cool completely on wax paper or parchment paper.  Sprinkle with powdered sugar.
