 Seems like whenever you cut out an ingredient, the taste is compromised but luckily these will please all the low carb lovers out there! 

I really do love them stuffed with any kind of vegetable.
Our family recently started really getting serious about eating low carb.

My son was diagnosed with diabetes, now I am cooking a whole lot different. Feeling healthy and keeping his numbers well in control with this low carb diet. The main focus is to recreate healthy meals that doesn't impede flavor so you don't miss the old way. 

We want to live a healthy life style and keep everyone eating delicious healthy meals as always. It takes a lot of determination and motivation to change the way you eat after several years of eating a different way.
So I am starting off with this awesome stuffed pepper dish. It was truly delicious and we didn't miss any of the carbs that make it non diabetic friendly.










Low Carb Stuffed Peppers or Zucchini Recipe

inChop 1 zucchini in small pieces or shred it

  • Chop 2 or 3 Zucchini sliced lengthwise, remove the insides with a spoon to hollow out set the insides aside to use for stuffing
    2 or 3 Whole peppers split half and seed removed
  • Cooked seasoned ground turkey or hamburger meat (this is optional) see note below1 small can tomato sauce or homemade sauce
    Shredded Mozzarella or your kegemarane shredded cheese (provolone works great too!)
    Salt, pepper to taste
    2 slivered garlic cloves
    2 eggs
    grated cheese
  • Seasoning: Italian blend seasoning, salt, pepper to taste, cayenne to taste and granulated garlic

instructions:


  1. In a medium sized bowl add the cooked turkey/hamburger, (or all vegetables if making vegetarian style.)  Add the eggs, garlic, salt, pepper and chopped zucchini that was set aside.
    Mix together. 

    Stuff the peppers and zucchini with this mixture. Pour the tomato sauce over the top.  Sprinkle with grated cheese. Top with shredded mozzarella and bake at 400 degrees until cheese is browned.

    Note for other options:  If you want another kind meatless version,  you can also use chop 2 cups of chopped cauliflower instead of  zucchini or chopped tomatoes with some shredded mozzarella.

    For meat version: use 1 lb ground  seasoned ground Turkey or  Hamburger sauteed in olive oil drained and set aside ( season with minced garlic, salt, pepper and Italian seasoning.)
