German Potato Salad
ingredients:
1 cup water
1/2 cup white vinegar
6 strips crispy bacon crumbled reserve the grease
1 tablespoon butter
2 tablespoons flour
2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon dill
1/4 teaspoon celery seed
6 cups sliced potatoes cooked in salt water and drained set aside
2 hard boiled eggs chopped
1 teaspoon granulated garlic
1/2 teaspoon pepper
2 tablespoons freshly chopped Italian parsley
Optional: 2 tablespoon finely minced onion or chive mix that in the egg step)
instructions:
INSTRUCTIONS:
Cook the bacon until crispy (reserving the grease in the pan) set aside the bacon in dish crumbled.
Boil eggs, peel, chop them set aside. Boil sliced potatoes drain and set aside.
In the reserved pan with bacon grease. Add the butter. Stir in the flour, sugar, pepper, salt, dill, celery seed, garlic, vinegar stirring till blended together, pour in the water. Cook and stir until it thickens. Around 1 minute. Add the chopped eggs, parsley and stir. Pour over the sliced cooked potatoes, top with crumbled bacon. Serve hot.
